I'm going to preface this recipe by saying that I have yet to meet a person who doesn't totally love these cookies. They are the best. I look forward to fall for this very reason - getting to make these spongey bites of deliciousness.
I wish I could take credit for the recipe, but I learned this one from a college roommate, who has also passed along another life-changing cookie recipe to me (maybe I'll save that one for Christmas time). So to her I am forever grateful (Thanks Kel! :) That's one of the parts I enjoy about making these cookies, is it always brings back fond memories of baking (and eating) with my college roomies.
Ok, now onto the recipe. What's almost better than how delicious these are, is how incredibly easy they are to make. I'm the kind of person that looks at a recipe with 5 ingredients and checks out cuz I'm already overwhelmed. So this recipe is my best friend. You ready?
You need:
1 can of pumpkin
1 box of spice cake mix
Chocolate chips.
That's it.
Yup, 3 ingredients and you're done. And you just mix them all together, form them into balls on a cookie sheet and bake in an oven preheated to 350 degrees for 12-15 minutes (I usually bake them closer to 12). Then it's time to enjoy! An added bonus is that they sorta taste like muffins which therefore makes them acceptable for breakfast. Perfect.
I hope you enjoy these delectable morsels if you make them for yourself! This weekend it finally started feeling like fall in So Cal - the air, the light, the slight chill in the morning and evening - all so subtle and yet so clear the seasons have shifted. Which is why the second batch of these cookies was necessary for this weekend :)

ReplyDeleteI bought chocolate cake mix and pumpkin at the store yesterday. Now Im kicking myself for not looking around and thinking that of course spice mix would go perfectly with pumpkin. Maybe Ill pop back in today to get some. The look delicious and could probably be muffins too.

Aww! I bet these are yummy! I've been seeing all these pumpkin recipes that look and sound delightful! Unfortunately, my tummy doesn't let me enjoy them:( Yet, I can have pumpkin seeds, and I have been craving them like mad! I always crave pumpkin seeds in the fall!
